Searching for a quick weeknight winter warmer? Look no further than this quick and easy bean stew. Add sausages for an extra protein punch.
Ingredients:
- 1 tbsp olive oil
- 2 cloves garlic, finely sliced
- 1 onion, finely chopped
- 20g fresh rosemary
- 1/2 tsp chilli flakes
- 1 tbsp dried oregano
- 100ml white wine
- 1 vegetable stock cube
- 200g tinned chopped tomatoes
- 400g tin butter beans, drained and rinsed
Optional
- Sausages; meat or vegetarian
Method:
- Heat the olive oil in a large saucepan. Sauté the onions, garlic and rosemary for five minutes, until the onions are soft and translucent.
- Add the oregano, chilli flakes and white wine and cook for 3-4 minutes until it reduces by half.
- Crumble in the stock cube, tinned tomatoes and 200ml water. Add the beans and continue to simmer for 15-20 minutes until the sauce thickens. Season to taste.
- If using, cook the sausages separately. Once cooked, the sausages can also be placed to simmer along with the beans.
- Serve with steamed greens, or sweet potato mash for a comforting, economical meal.
