Green Mango Bubble Tea

Belinda says: “Taiwanese Bubble Tea is a hugely popular drink amongst children and teenagers but some recipes can contain over 10 teaspoons of sugar and a lot of artificial flavourings and colourings, including tartrazine and sunset yellow, both of which have been linked to hyperactivity in children. This is a healthier version which has the benefit of green tea, but with much lower sugar. To avoid the caffeine, you can use decaffeinated green tea.”

Ingredients:
- ½ cup fresh mango (Belinda used defrosted frozen mango, but you can also use frozen mango for a thicker texture)
- 1½ cups coconut milk (canned coconut milk will give you a richer flavour and creamier texture)
- 1 level tsp matcha green tea powder
- 1 tsp Sweet Freedom (optional)
- Juice of ½ lime
- 2 tbsp freshly-cooked boba pearls
Method:
- Place all the ingredients except for the boba pearls into a liquidiser and blitz until smooth. Check for flavour and adjust if necessary.
- Pour into a glass and, for the full bubble-tea effect, add the pearls then drink through a wide straw.
